How should a food business account for stock?
Raw materials, packaging and finished products are recorded as stock until they are sold, used up or written off.
In meat processing, stock moves quickly and some of it spoils or is wasted. If waste and write-offs are recorded each month, the stock figure stays close to what is in the cold store. It also shows you where the margin goes.
The value of stock at the end of the year goes into the annual report, which is due by 30 June. A count at year end makes that figure reliable.
Can you reclaim the VAT on your purchases?
Usually yes. A VAT-registered company deducts the VAT on business purchases in its monthly VAT return (KMD), due by the 20th of the following month.
In plain terms: you add up the VAT on your sales and the VAT on your purchases. You pay the difference, or claim it back if the VAT on purchases is larger. Larger invoices are also listed one by one in an annex called KMD INF.
Manufacturers should know one exception. If you buy certain metal products from another VAT-registered business, the domestic reverse charge applies. These include steel bars and rods, beams and sections, pipes and welded mesh. Your supplier invoices them without VAT, and you account for the VAT in your own return.

Payroll for production and shift staff
Wages for shift workers are reported in the payroll tax return (TSD) by the 10th of the following month.
On top of gross pay, the employer pays social tax of 33%. Each new worker must be entered in the employment register (TÖR) before their first shift. With staff who come and go, that step is easy to miss, so tell us about new hires in advance.

Do I need an accountant based in Rakvere?
Not for the accounting itself. Returns are filed through the e-Tax Board (e-MTA), the Tax Board's online portal, and the annual report is signed digitally. We are registered in Pärnu and do all of this online.
